      Country Boy Grilled Chicken Chopped BBQ Salad Recipe

      If you're looking for a melt in your mouth grilled chicken recipe to make with only a few ingredients, look no further.  This  tender and flavorful juicy chicken only needs two ingredients!   Easy marinated chicken tops a bed of crispy greens and all your favorite southwest toppings for the best chopped BBQ chicken salad around.

       Country Boy Grilled Chicken Chopped Salad Ingredients
      •  2- 12oz bags Mixed SaladGreens
      • 1 ½ pounds of Country Boy Grilled Chicken (*see instructions below)
      • ½ c canned black beans, drained and rinsed
      • ½c corn salsa
      • 4oz. shredded cheddar cheese
      • 1 tomato diced
      • 1c tortilla strips
      • Country Boy Ranch Dressing (*see instructions below)
       

       Country Boy Ranch Dressing Ingredients

      • ½c  your favorite ranch dressing
      • ¼c Hunter's Country Boy marinade
      • Pour dressing and country boy marinade into a small bowl
      • Whisk ingredients until well combined
      • Cover and place in  fridge for 1 hour to allow the flavors to meld.

         

        Country Boy Grilled Chicken

        • 1c  Hunter's Country Boy Marinade
        • 1 ½ lbs. Boneless chicken breast
        • 1tbsp. King of Foods Poultry Seasoning
         

        Country Boy Grilled Chicken Chopped BBQ Salad Recipe

        1. Measure 1c of Hunter's Country Boy marinade into a large container with a lid or gallon plastic bag. Place  chicken breasts into  container with  marinade and turn to coat. Marinate overnight.
        2. When you are ready to cook the chicken remove the chicken from the marinade and shake off any excess. Discard the marinade.
        3. Sprinkle Hunter's Poultry Seasoning coating chicken breasts evenly.
        4. Preheat grill and prepare for direct cooking on medium heat (350°-450°F).
        5. Grill your chicken breasts until they reach an internal temperature of 160°F at the thickest part of the breast, turning chicken once about halfway through.  Depending on the thickness of chicken breast cook time may vary from 8-13 minutes.
        6. Assemble salad: Assemble salad by layering the lettuce in a large bowl. Top with chicken, tomato, corn salsa, beans, cheese. Pour desired amount of dressing on top of salad and gently toss to combine.
