Hunter's Country Boy BBQ Sauce on Grilled BBQ Chicken

Ingredients:

1 whole chicken (about 4-5 pounds)
1 cup of Hunter's Country Boy BBQ sauce
4 tablespoons of Hunter's Smoked Rub
Salt and pepper to taste

Instructions:

Preheat your grill to medium-high heat, around 375-400°F (190-200°C).
To spatchcock the chicken, place it breast-side down on a cutting board. Using kitchen shears or a sharp knife, cut along both sides of the backbone to remove it. Open the chicken up and flatten it by pressing down firmly on the breastbone.
In a small bowl, mix together the olive oil, a splash of salt and Hunter's Smoked Rub.
Rub the marinade all over the chicken, making sure to coat it evenly on both sides.
Place the spatchcocked chicken on the preheated grill, skin-side down. Cook for about 10-15 minutes, or until the skin is nicely charred and crispy.
Flip the chicken over and continue grilling for another 15-20 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
Every 10 minutes of grilling, brush Hunter's Country Boy BBQ sauce evenly over the chicken, allowing it to caramelize and develop a rich flavor.
Once the chicken is cooked through and the BBQ sauce is caramelized, remove it from the grill and let it rest for a few minutes before serving.
Garnish with chopped fresh parsley if desired, then slice and serve your delicious Grilled Spatchcock BBQ Chicken hot off the grill!
