Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 1 cup of Hunter's Country Boy BBQ sauce
- 4 tablespoons of Hunter's Smoked Rub
- Salt and pepper to taste
Instructions:
- Preheat your grill to medium-high heat, around 375-400°F (190-200°C).
- To spatchcock the chicken, place it breast-side down on a cutting board. Using kitchen shears or a sharp knife, cut along both sides of the backbone to remove it. Open the chicken up and flatten it by pressing down firmly on the breastbone.
- In a small bowl, mix together the olive oil, a splash of salt and Hunter's Smoked Rub.
- Rub the marinade all over the chicken, making sure to coat it evenly on both sides.
- Place the spatchcocked chicken on the preheated grill, skin-side down. Cook for about 10-15 minutes, or until the skin is nicely charred and crispy.
- Flip the chicken over and continue grilling for another 15-20 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Every 10 minutes of grilling, brush Hunter's Country Boy BBQ sauce evenly over the chicken, allowing it to caramelize and develop a rich flavor.
- Once the chicken is cooked through and the BBQ sauce is caramelized, remove it from the grill and let it rest for a few minutes before serving.
